I entered a bunch of my horses today using enter-all and almost all of them had 1 energy, but I received the message that they entered 2 shows before running out of energy. I took a screenshot of October's Dawn but I believe some with 2 energy entered 3 shows. Does the last energy point have more value or something or is this a bug ?

It’s a bug, but at this point it’s more like an easter egg hidden in the game. If you have 9 energy left and you do an enter-all it takes you to -1, and we don’t know why and we’ve tried to fix it and it just won’t get fixed! So basically it’s a bug that we’ve decided to let live there because we can’t figure out how to get rid of it, haha.

Aqua, if you do private shows and you don't have enough and end up with 2-4 energy. Rather than entering them into shows by hand (which is easy) simply use the enter all. ;)
