I was curious as to whether anyone has used this on an ollld animal? If you did, what happened when your animal retired? Did it age as a normal animal would (16, 17, 18 example)?

Yes, when a resurrected animal retires once again it goes back to being the 15, to 16, to 17, etc. and ages as if it was never retired in the first place. Kraid & Leuda are good examples of that, both were resurrected around the same time so they're a week off in age of each other. Kraid should be 310 and Leuda 245.

The age thing would bother me, if I was to do it. Though I'm thinking perhaps an Admin would be able to turn the age back to its original once it retires for the second time.

Thanks for replying! ^_^

@Maha - Oh you mean like what I'm doing? XD I resurrected a dog, had her de-aged and she'll be retiring again on the 31st. But her resurrection is not for breeding purposes, just for making up for going on a very long hiatus when her training was finishing up.
