The days have been flying by, but that's okay! We're having some fun! :D

For today, I'd like to see those Christmas Cookie recipes you've got stashed away!

I just love the flavor and chewy soft yummy goodness! Haha!
I usually buy the pre-mixed cookie batter box/bag since I'm lazy and don't want to add all of the ingredients, but I usually end up putting red and green sprinkles on to look more festive!

Each year my cousins and I make the family cookies!

Our favorite to make are sugar cookies. I don't have an exact recipe because we normally just google it when the time comes, but this looks right along the lines of the right recipe!

On a side note I just made these and they're awesome!!!

this is the recipe from an ancient church cookbook that my mom has always used and my grandma always used for cutout sugar Christmas cookies. I know I've taken pictures of them in years past but I can't find one on social media anywhere and we haven't made them this year yet. šŸ˜›

We always make Rum Balls, here at our house. Danish/Polish tradition or not, we've always made a batch and sent them to relatives and put them out on Santa's plate on Christmas Eve. They are so much better as they age and sit for a bit, and they're alcoholic, so watch the kiddies.Ā

This is one of my family's recipes. I don't know where it came from or how old it is (and I'm sure there is a more current version of this recipe) but it at least came from my grandmother. My aunt and I just made a batch last week.

My favorite are Snickerdoodle cookies!

Ingredients

    • 2 teaspoonsĀ cream of tartar*
    • 3 cups all-purpose flour (spoon and leveled)
    • 1 teaspoonĀ baking soda
    • 1Ā and 1/2 teaspoons groundĀ cinnamon
    • 1/2 teaspoonĀ salt
    • 1 cupĀ (2 sticks orĀ 230g)Ā unsalted butter, softened toĀ room temperature
    • 1Ā and 1/3 cup (267g)Ā granulated sugar
    • 1Ā largeĀ egg Ā 1 largeĀ egg yolk, at room temperature
    • 2 teaspoonsĀ pure vanilla extract

Topping

    • 1/3 cupĀ (70g)Ā granulated sugar
    • 1 teaspoonĀ groundĀ cinnamon
    • Instructions

          1. Preheat oven to 375Ā°F (190Ā°C). Line two large cookie sheets with parchment paper or silicone baking mats (always recommendedĀ for cookies). Set aside.
          1. Make the topping:Ā Combine the granulated sugar and cinnamon together in a small bowl.
    • Make the cookies:Ā Whisk together the flour, cream of tartar, baking soda, cinnamon, and salt together in a medium bowl.
    • In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on high speed until smooth and creamy, about 2 minutes. Add the egg, egg yolk, and vanilla extract. Beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. With the mixer running on low speed, slowly add the dry ingredients to the wet ingredients in 3 different parts. The dough will be thick.
    • Roll cookie dough into balls, about 1.5 Tablespoons of cookie dough each. I recommendĀ this cookie scoop.Ā Roll the dough balls in cinnamon-sugar topping. Sprinkle extra cinnamon-sugar on top if desired.Ā Arrange 3 inches apart on the baking sheets.
    • Bake cookies for 10 minutes. The cookies will be very puffy and soft. When they are still very warm, lightly press down on them with the back of a spoon or fork to help flatten them out. Allow cookies to cool on the baking sheet for 10 minutes and transfer to a wire rack to cool completely.
    • Cookies remain soft & fresh for 7 days in an airtight container at room temperature.
    • Make Ahead Instructions:Ā There are a few options here! First, you can prepare the cookie dough and chill it in the refrigerator for up to 3 days. Make sure that you let it come to room temperature before rolling and baking the cookies.Ā You can alsoĀ freeze the cookie dough balls. Roll the dough into balls then freeze the balls for up to 2-3 months. You can freeze the cookie dough balls with the cinnamon sugar coating or without, but I recommend freezing without the topping. When you are ready to bake, remove the balls from the freezer, let sit for 30 minutes, pre-heat the oven, then roll into topping. You can also freeze the baked cookies for up to 3 months. Thaw overnight in the refrigerator before serving.
    • Cream of Tartar:Ā Cream of tartar is required for this recipe. Please see the text of the post for more information.
    • Extra Egg Yolk:Ā To bring this dough together so it isnā€™t quite as crumbly use 1 large egg, plus 1 extra large egg yolk. Iā€™ve been doing this recently and the snickerdoodles taste even softer, moister, and richer.

my favorite is COWGIRL COOKIES (cowboy cookies)

Gingerbread men!

Ingredients:



  • 350g/12ozĀ plain flour, plus extra for rolling out

  • 1 tspĀ bicarbonate of soda

  • 2 tspĀ ground ginger

  • 1 tsp groundĀ cinnamon

  • 125g/4Ā½ozĀ butter

  • 175g/6oz light softĀ brown sugar

  • 1 free-rangeĀ egg

  • 4 tbspĀ golden syrup

  • Ā 

  • Decoration:Ā 

  • writingĀ icingĀ 

  • cake decorations (optional)

    Method:

  • Ā 


  • Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.




  • Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in cling film and leave to chill in the fridge for 15 minutes.




  • Preheat the oven to 180C/160C Fan/Gas 4. Line two baking trays with greaseproof paper.




  • Roll the dough out to a 0.5cm/Ā¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.




  • Bake for 12ā€“15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations, if using.

My favorite Christmas time cookies are shortbread cookies. They melt in your mouth and are just so good, plus they have few ingredients and are suuuper easy to make. I always make some around this time!Ā 

You only need butter, sugar, vanilla, cornstarch and flour. Optional are nuts, chocolate, or candied cherries, or whatever you like!

Ingredient measurements: 2 cups softened butter, 1 cup powdered sugar,Ā  1 tsp vanilla, 1/2 cup cornstarch, 3 cups of flour.

Cream the butter, sugar and vanilla together, and slowly add the cornstarch and flour. Mix for about 10 mins with a hand mixer. Drop the dough onto a cookie sheet using a spoon or one of those ice cream scoopers (add the nuts, chocolate, whatever on top) and bake for 15 mins at 350F.Ā
