Bacon-Potato-Leek Soup

I sent this over to Tronic because she asked and I have been bragging about it the last couple days so I decided to share, its super simple, cheap, and quick!

(Yields about 3 decent sized bowls)

Ingredients:
1 large leek
1 meduim-large russet potato
2-3 tbl of butter
4 cloves of garlic
1 cup of heavy whipping cream
2 cups of chicken stock
5 thick cut slices of bacon

Slice bacon into bight size pieces, add to a cool large pot and cook on meduim-high heat until crispy.

While the bacon is cooking cut the leak so that the gren top is discarded. Clean the leek EXTREMELY well, leeks grow in sand and sand gets into almost every layer of the onion. Once clean cut in have length wise and then cut into thin half moon shapes.

Peel one russet potato, and cut into small 1/2'' cubes.

Mince 4 cloves of garlic.

Drain the bacon on paper towels BUT LEAVE the bacon drippings in the pot.

Add your butter and allow to melt.

Add your leeks and potato, cook for 3 minutes on medium heat.

Add a generous ammount of salt and pepper.

Add garlic and cook for additional 2-3 minutes until the raw smell of the garlic has dissipated.

Add your chicken stock and cream, stiring everything together and scraping the left over 'goodies' from the bacon off the bottom of the pot.

Bring to a rolling simmer and cook for about 15 minutes (or until you can very easily smash the potatos with your wooden sppon.)

Take off the heat and empty contents into a blender.

Cover the top of the blender with a towel (in case yours likes to expode like mine) and blend until smooth and no chunks.

Check soup in case it needs additional salt, pepper, or other spices of your choice.

Serve in bowls and garnish with bacon if desired.

It sounds good, but too many ingredients I'd have to buy. :P Someone come over and make it for me! It's obviously the perfect solution.

This sounds totally fantastic. I'm gonna make some and when someone asks for the recipe, I'ma say "Remember that horse game I play that you called 'stupid'? Hmm."
