RECIPE: Asian Chicken and Broccoli

This is an easy-to-make Asian Chicken and Broccoli recipe that I adapted from a broccoli beef recipe I found a while ago on a soup can. It’s super easy to make and really flavorful and good.

Servings: 4 people

Ingredients:
- 1 Boneless, Skinless Chicken Breasts (trimmed of fat, if necessary, and cubed)
- Broccoli (however much you want, it can be fresh or frozen and steamed)
- 1 can condensed tomato soup
- 2 tablespoons of soy sauce
- 1 tablespoon white vinegar
- 1 teaspoon brown sugar
- minced garlic, crushed red pepper (for spicy food lovers)
- Canola Oil & Sesame Oil
- OPTIONAL FOR SERVING: 2 cups rice (1/2 cup per person), cooked as package directs

Instructions:
1. Heat 2 tablespoons of Canola oil and ½ teaspoon of sesame oil in a large skillet, once it is heated add your chicken and stir-fry until the chicken is all the way cooked (white all the way through).
2. Add your tomato soup (still condensed, don’t add water!), soy sauce, vinegar, and brown sugar. Also add spices at this point, just sprinkle them on top to taste (remember, a little crushed red pepper goes a long way). Stir with chicken until mixed thoroughly and bring to a boil.
3. Add your broccoli and continue to boil sauce until it reaches your desired thickness and your broccoli is tender-crisp. Once it does, take it off of the heat and serve over rice.

Variations and Notes:
- If you like things super thick and meaty with not a lot of sauce, add an extra chicken breast in the beginning. You can also add more veggies if you so desire.
- You can substitute in beef or tofu (cooking via the same directions) for the chicken if you’d prefer. Or even use a mix. For the beef, I would choose a steak of roughly 1 lb that is lean and looks fresh (don’t use ground beef with this recipe!), cook until it’s brown and for the tofu follow package directions.
- Ramen noodles as a substitution for rice are great in a pinch (or if you just don’t like rice).
- For added nutritional value and to thicken sauce, adding finely minced spinach (you can find frozen cubes of it in a bag at the grocery store) with the broccoli is good and doesn’t really change the flavor of the dish.

Made this tonight, it was good! I don't say this often, but I think I would have liked it even better without the chicken - the sauce that was made was really good with white rice. Randy and I wanted more sauce, though, so I might have to play around with the ratio of everything next time I make it. :)

Yay! :). I'm glad you made it/liked it!And yeah, I don't really eat the chicken, it's more for Joel. It would be good with extra veggies in it, like carrots or something. And oh my god, I just realized I forgot to add Broccoli into the ingredients list! -goes to fix-
