I have returned to play after a long time without playing, and I wish to switch out horses and start fresh.

How woul d I go abouts deleting my horses? Not just reteiring by deleting them all together?

At the bottom of each animals page there is a retire button. Click it and then the horse will disappear and become deceased.  (:

Yup! It's just called retirement instead of deletion after a certain age.
