So I used to be huge on pumpkin spice everything, but I was cursed with developing an allergy to cloves, so I don't get to order pumpkin spice things when I'm out and about anymore, because there's always a risk of a reaction.... so now i have to make them at home. My favorite recipe that I make all the time is this quick and easy dupe for a pumpkin mousse. In a pinch when I run out of coffee creamer I've been known to throw a spoonful in my coffee and it works well in that too. Basically you take a tub of cool whip (the regular size or half of the huge one), 1 can of pureed pumpkin, 1 regular sized box of vanilla jello pudding mix (i get the french vanilla), and then I just use cinnamon, but you can definitely use pumpkin spice instead, just season to your preference. You dump it all in a mixing bowl, mix mix mix, and boom done. Keep it in the fridge or freeze it depending on if you want it to be a mousse texture or an ice cream dupe. And you can swap out the pudding mix and coolwhip for like the lite / sugarfree formulas if you want, it still works pretty well.

I look forward to my husband's chili recipe every fall! Best chili I've ever had! We dont make it outside of fall/winter because its a hot dish and thats when we want to hot dishes since it cold out (or starting to get cold out).

My husband never really liked chili before finding this recipe because in his experience, it had always been too saucy and not enough in it to be sustaining enough. But this one is nice and thick and hearty and meaty!

Such a weird sounding combo, but LORDY it's nice, AND it freezes well, too! I removed the olives because my son and husband hate them, but it didn't detract from the flavour. So so good with crusty bread.
