I always want to try making homemade egg nog every year, but I haven't actually tried it yet.

I love making country style pancakes.  they are great during camping and any time of day...can make it eggless by just adding more oil, 

Country Style Pancakes

1 1/2 cup Flour

2 tbsp Sugar

1 tbsp baking powder

1/2 tsp salt

1 egg beaten

1 1/4 cup milk

3 tbsp melted margarine

Preheat your skillet/pan/cast iron pan.  sift together the dry ingredients.  whisk together the egg and milk and then add in the melted margarine and stir. add to the dry ingredients.  Batter will be lumpy and thick.  Add to a hot skillet with oil and enjoy. makes about 6 large pancakes. 

can double the recipe for more.  Or you can omit the egg and add oil.  I did use this recipe while camping and you can add just water but it doesn't get fluffy.

I love suagr cookies and I just moved so I'd really have to dig for my book of old recipes, but this is pretty close:

Lussekatter / Saffron buns 
50g yeast


175g butter 


1g saffron


200g sugar


500g milk


0.5 teaspoon salt


900g wheat flour

1. Important step*: Melt the butter in a pot, crush saffron and a bit of the sugar in a mortar. Pour the saffronsugar mix into the butter and add the milk. 
2. The butter saffron milk mix shouldn't be warmer than 98.6F / 37C, I do it a bit colder than that just to be sure the yeast doesn't die because it's going in next. I do the rest of the sugar and salt in the liquids as well and stir till it all have "melted".
3. Put almost all flour in a bowl and mix with the liquid. If you have a machine for baking now is a good time to use it. It's not necessary though but simplifies stuff. Work the dough for about 5min in machine or 10min by hand.
4. Let it raise in a draftfree space at least 30-45minutes.
5. Knead the dough and mix in more of the flour if necessary. 
6. Make buns, that you then roll out to finger thick "bands", roll up the ends in different directions so they look like fancy S:es. Put them on a baking sheet / baking pan.

8. Let raise for another 30-45minutes. Melt some butter and brush on the buns. Put the oven on 437F / 225C (put in the buns when the oven has reached this temperature).

Can be veganized, I will bake these tomorrow but use maragarine and plantbased milk. *Once I baked the buns like I bake any other bread and the result didn't turn out good, they became way too pale. You want them to have the yellow color and the taste of saffron.

Grahm cracker crust
1 pack of banana pudding
1 pack of cheesecake pudding

make pudding
put in crust

fridge for 6-8 hrs until set

whip cream on side and serve

I made Coquito the last two years for Christmas now it's something my boyfriend's family asks for every year. It's soo good. This is the closest recipe I could find to the one I use :)

Oreo cheescake truffles! Soften 2 bricks of cream cheese, then crush an entire bag of oreos.  mix together in a bowl until fully combined then cover and leave in fridge to chill for an hour or two.  Line a cookie sheet with parchment and in a seperate bowl melt white, dark or milk chocolate.  Take a melon baller, scoop the cream cheese mixture into balls and set them on the cookie sheet.  one at a time, dunk the balls in chocolate and put them back on the cookie sheet. Set everything in the fridge to harden and bam! oreo truffles!

1 box vanilla instant pudding mix
1 3/4 cups of eggnog
1 cup whipped topping like cool-whip
1 graham cracker pie crust
Can add additional whipped topping & ground nutmeg

We also make our own icing with powdered sugar, melted butter, milk, (add until correct consistency) and a splash of vanilla. Icing the cookies, then *most important and most difficult* don't eat them for a full 24 hours. The wait is long and so difficult but the icing soaks into the cookies and they are just OOF *chefs kiss*

I made pepernoten cookies if that counts! 
pepernoten are a true Dutch thing, usually for sinterklaas.

Ingredients:

  • 100 g unsalted butter (Lurpak)

  • 150 g light brown sugar

  • 1 medium egg

  • 1 tsp vanilla extract

  • 200 g flour

  • Pinch of salt

  • 1 tsp baking soda

  • Pepernoten (with or without chocolate)

Instructions:

  1. Mix the butter and light brown sugar until creamy.

  2. Add the egg and vanilla extract and mix again.

  3. Add the flour, salt and baking soda; mix into a dough.

  4. Chill the dough in the fridge for about 1 hour (preferably overnight).

  5. Divide the dough into equal portions and roll into balls.

  6. Place them on a baking tray, leaving enough space in between.

  7. Press pepernoten into the cookie dough balls.

  8. Bake in a preheated oven at 170°C for 12–14 minutes, until golden.
