Gluten Free Eating

As some of you know from chat, over the last few months I have been diagnosed with Celiac Disease, which basically means that if I eat any amount of gluten that it damages my intestines and makes me very sick.


It's been frustrating to eat out, and avoid cross contamination (even eating french fries that have been fried in the same oil as breaded onion rings will make me sick) and also just to eat normal foods (for example, I kept getting sick on my trip and couldn't figure out why, it took days before I realized that the juice I was drinking and using in cocktails wasn't gluten free because, unlike with wheat, they're allowed to hide barley and rye ingredients under "natural flavors" and not disclose them on the label).


It's not all bad. I've found some good gluten free products and substitutions, and I largely cook without gluten-contaning products anyway because I'm not a huge bread person. (It helps that there are lots of good gluten free pastas! Haha.)


Also it helps keep my sanity that Buffalo Wild Wings which is basically my favorite restaurant can accomodate gluten free. They fry their traditional wings separately, and only a few of their sauces contain gluten, and none of their dry rubs do (which are my favorite anyway). The only thing is that you have to have the sauce on the side because they spin traditional wings and breaded boneless wings in the same containers. But I do miss Nashville Hot Chicken from KFC, especially because it's right by my house. So, my spicy chicken needs are still being met even without gluten, haha.


So! I know from this whole endevour that I am not the only person on HP who eats gluten free and lots of people here have family members who need to eat gluten free. I thought I would start this thread for people to share their favorite gluten free recipes, products, and resources!


I made a gluten free s'mores icebox cake which was really good! The recipe is also dairy free, but I just used heavy cream instead of coconut milk because I'm okay with dairy. http://iowagirleats.com/2017/07/03/no-bake-smores-icebox-cake/


I also made s'mores bars which are NOT a gluten free recipe, but I used the same gluten free graham crackers from the recipe above and Namaste brand gluten free flour blend and they were THE BEST THING EVER. http://pinchofyum.com/smores-bars


Also, I found almond flour for $3.99/lb yesterday at Costco which is unheard of. The lowest I've ever seen it before is $7.99/lb on Amazon so I'm pumped about that!


I have found a few good cookbooks, but there's not a lot of gluten free specific ones, but Paleo cookbooks have been good. I just use dairy as normal in the recipes.


Oh! And alfredo sauce I know is an issue for a lot of people because so many of them are made with a roux, but this is the recipe I've always used which is naturally gluten free, and also in my opinion, the best: http://www.foodnetwork.com/recipes/fettuccine-alfredo-3645709

I have missed this somehow, but I am sorry you are going through this. There is gluten in so much stuff it's really hard to avoid. My sister sent me this today by mistake (she was trying to sent it to her friend who is gluten intolerant) and I figured I could share it with you. Who doesn't love Banana Bread?

I've actually been trying to eat more gluten free things. Just because some foods with it tear up my stomach D=
