Lazy Day Chicken Parmesan

I found this recipe on Pinterest (LINK: http://the-not-so-perfect-momblog.blogspot.com/2013/03/the-not-so-perfect-mom-meal-plan-3.html), and made it tonight for dinner! It was really good. And I, like the original author, like to eat but hate to make chicken parm. (I just don't like it because I don't like frying things that splatter everywhere like the not-so-lazy recipe tends to do).

But if you're feeling lazy or are pressed for time, this is a great recipe. You could also spruce it up a bit and make your own marinara and all that and then just throw it in the crock-pot to cook :). Or the oven if you're in more of a hurry. This is pretty much a casserole anyway.

So!

I used:
2 chicken breasts, cut in half
1 can Roasted Garlic and Parmesan jar of Prego
Most of a regular sized block of Mozzarella Cheese (sliced thin)
Progresso Italian Breadcrumbs (1/2 cup)
Grated Parmesan Cheese (not fresh, mine is from a jar) (1/4 cup)
1 egg
Some left over cooked, plain spaghetti noodles from last week
The last of my olive oil (probably 2 tsps)
some salt and pepper

And then I put the olive oil in the crock pot, put the chicken on top. Mixed the eggs, breadcrumbs, salt, pepper, and parmesan cheese in a measuring cup and put it on top of the chicken (rather than dipping it in the egg and chicken separately). Then we put the mozz. on top of that and covered it in the prego. Then cooked on high for about 2 or 3 hours! We ate it over the left over noodles and it was good!

Oh, and we used our new crock pot liners so we didn't have to clean the crock pot after, so it was perfect and amazing-ly lazy, haha.

Let me know how it turns out if you make it :). Oh! And you might want to cut down the bread crumbs a bit if you're only using 2 chicken breasts, they were a little too cake-y, probably 1/8th of a cup less would have been better. Either that or use more sauce. But it'll be good left over I'm sure so you could also just use more chicken than I did, haha.
