Post your meal plans here! I know a lot of us either make or strive to make a weekly meal plan, soo tell us what's on yours! And post recipes if you're so inclined so that we can find them for our own plans ;).

... I need to get Alton Brown's cookbooks.

 

I don't try to do daily plans, since we're on a tight budget and I want to make sure that we're eating through our leftovers. But I'll build things based on what's on sale so we tend to only get like. One to two different kinds of protein a week and a focus on making things that are as high yield as possible.

 

- Italian chicken sliders (cook chicken breasts in the slow cooker with marinara, shred, and slap onto toasted garlic buttered dinner rolls with parmesan, mozzarella, and provolone) with green beans. One of my house's favorites!

 

- Chicken noodle soup (which I do some kind of variation weekly depending on sales because it's cheap and lasts... basically all week so I make it on my day off).

 

- Chicken quesadillas with black chili beans

 

- Chili cheese mac

 

Next week it's all pork and ground beef on sale so I know I'm gonna do my apple blackberry pork loin, probably carnitas, pulled pork, and either tacos or meatloaf if I can badger my roommate into it.

I need to start meal planning.  I hate cooking and coming up with something that isn't tacos every night just sucks.  I'll be following for ideas! ☺

I used to be SO good about meal planning and now I suck. Maybe that'll be what I try to get back into this year.

I always say I'm gonna come up with meal plans, but instead I just look through the recipes I've pinned on Pinterest and go from there. Sometimes we just head to the store and buy whatever. I'm always changing my mind about food, and since we also have leftovers all the time, I'd rather make things up as I go.

That said, you should all post recipes because I will so bookmark them for future enjoyment :D

Chao, if you have a Half Price Books check there for the Alton Brown books! I got them in almost perfect condition for like $15 each. HPB is the BEST for cookbooks.

I’m also indecisive about food so I make sure that everything on my plan is something I am actually excited to eat, because if it’s not, it’ll never get made. We used to eat out almost every day, but now I can’t really eat anywhere but my own kitchen without getting glutened, so I’m forced to use that education of mine and cook :P.  I don’t stick to any specific days though, I just pick one of the things on the list and make that. We also try to have leftovers for lunch the next day.

Since I live at home still, I don't do all the meals, but I'm definitely delving into it more now that I've finished school! I love to cook so much...

Yesterday I made some lemon pepper chicken breasts (from a bag haha) with homemade rice pilaf so my dad could eat it too: http://lifemadesimplebakes.com/2017/01/perfect-rice-pilaf/ - i substituted the orzo with some wild rice we had and my dad really liked it. He even said he did, which means it was actually really good haha.

https://damndelicious.net/2014/02/21/swedish-meatballs/ I've made both recipes, I believe, and they're both good. I just use GF panko bread crumbs, and if you can't find them, they are also very simple to make from scratch (I've done it. It's simple.) One of the recipe also calls for ground pork along with the beef, which is how Swedish meatballs are usually made, but the one with just beef is delicious as well.

I'm so hungry now...

I need to get rid of a lot of our foods on the pantry shelf so I've tried to meal plan around that.

Sloppy joes

Spaghetti and meatballs

Tomato soup and grilled cheese

Tacos

Cheeseburger mac

Kielbasa, potatoes, and green beans

Chicken and noodles

Banana bread

Okay, so this week I am making:

Tacos with salad and chips and salsa

P.F. Chang's Chicken Lettuce Wrap Copycat

Carabba's Chicken Bryan Copycat (chicken breast with sundried tomatoes and goat cheese, in a lemon butter sauce) with salad and roasted brussels sprouts

Roast beef with potatoes (probably mashed) and asparagus

Shrimp Scampi (Red Lobster Copycat) with broccoli

Pimento cheese

Pepper Bombs for Christmas breakfast because my grandma asked for them (recipe: https://sizzlingmess.com/2017/12/11/pepper-bombs/)

Wings (using Buffalo Wild Wings dry seasonings)

Brown Sugar Balsamic Pork Loin with Roasted Carrots

Chicken Tikka Masala with Mint chutney and Basmati rice

And fudge for Christmas!

 

Can you tell I'm missing restaurant food? Haha. I'm not following any specific recipes for any of them besides the pepper bombs, which I posted the link to above. But for anything that turns out great, I will post the recipe on my blog later on!

For the next two weeks, my meal plan is:

Brown Sugar Balsamic Pork Loin (I already made this, turned out great!) with mashed potatoes and gravy

Cubanos with leftover pork loin

Chicken Bryan (left from last meal plan, never made it) with brussels sprouts and mashed potatoes

Nashville hot chicken strips with potato salad and coleslaw (see recipe links in original post)

Chicken Tikka Masala with basmati rice and mint chutney (recipe: https://sizzlingmess.com/2017/12/29/chicken-tikka-masala/)

Dal Makhani with basmati rice and mint chutney (recipe from The Indian Cooking Course by Monisha Bharadwaj)

Mushu pork with hot and sour soup and sweet and sour sauce

Wings with chili con queso nachos, using buffalo wild wings dried spice blends (Chipotle Barbecue and Buffalo)

Boneless wings with homemade parmesan garlic sauce and sriracha buffalo sauce

Sushi bowls (going to do crab with brown rice, avocado, cucumber, and eel sauce)

Vegetable Korma with basmati rice and mint chutney

Fettucini alfredo with chicken sausage and broccoli

Chili

 

And then I made a s'mores icebox cake today, and also am planning to make french silk pie!

Everything is gluten free, as always. And I will post recipes on my blog for anything that turns out well!

Any kind of meal planning got put on hold when I sliced a chunk of my finger off. LMFAO

 

But this week we've done Mujadara with tzatziki, tonight was a vegetarian stirfry. I really want to do twice baked potatoes this weekend...

Okay, I kind of fell off for awhile, but my current meal plan is:

Ribs on the smoker with potato salad and baked beans (potato salad recipe is on the blog)

Bacon wrapped andouille sausages, also on the smoker

Pub-Stule buffalo wings (coming to the blog soon!)

Chipotle chicken tostadas

Orange chicken with brown rice

Corned beef reubens

Nashville hot chicken strips with coleslaw (both recipes on the blog, and linked in above posts)

Steak fajita nachos (coming to the blog soon!)

Spaghetti and garlic bread

Four cheese pizza with white sauce

Eggs Benedict

Charcuterie board dinner (meat/cheese/crackers)

 

Non-dinner things I am making this week:

Buffalo Chicken Dip

Green pepper rings with dill ranch for dipping

Pepper bombs (recipe is on blog!)

 

Desserts I am making this week:

We're all sick so I've pretty much just had a bottomless pot of chicken soup in the fridge all week.

Monday:

Breakfast: Low Sugar Cinnamon & Spices Oatmeal

Lunch: Pineapple

Dinner: Vegan "Chicken" Nuggets

 

Tuesday:

Breakfast: Low Sugar Maple & Brown Sugar Oatmeal

Lunch: Carrots

Dinner: Vegan "Chicken" Nuggets (they're good lmao - Boca brand)

 

Wednesday:

Breakfast: Low Sugar Apples & Cinnamon Oatmeal

Lunch: -- skipping as I'm going to be busy the whole afternoon

Dinner: Campbell's Vegetarian Vegetable Soup

 

Thursday:

Breakfast: -- skipping as it's my birthday and I'll be eating (way too much) later

Lunch: Gluten-Free Pizza & Strawberry Mochi from Bubbies

Dinner: ^ Probably another slice of (leftover) pizza and some more mochi

 

Friday:

Breakfast: -- skipping as I have a super-duper early class

Lunch: Either leftover pizza (if there's any left!) or Miso ramen

Dinner: Kiwifruit and green beans

 

I know I'm super boring, but I rarely make anything complicated haha. I like things that are instant and healthy versus having to cook pretty much all of the time!

Late with this one, but:

 

Smoked chickens with cucumber salad and Alabama white sauce

Mississippi roast with potatoes and roasted brussels sprouts (and today I am making French dips with the left overs which wasn't in the plan, haha)

Blackened salmon with pineapple-avocado salsa, arugula salad with basil-orange viniagrette, and GF garlic cheddar drop biscuits

Nashville hot chicken strips with coleslaw and potato salad

Sesame chicken with brown rice

Hot and sour soup

Smothered burritos (with leftover smoked chicken)

Smoked pork shoulder with Carolina mustard sauce

Chipotle chicken tostadas

Cubanos with barbecue chips (made with leftover smoked pork)

Green pepper rings

Pepper bombs (from my blog)

Bacon-jalapeno deviled eggs

Spinach-arctichoke stuffed GF baguette

Cookie dough chocolate cups (like peanut butter cups but with cookie dough inside)

 

Also I am smoking wings on Saturday which wans't in the plan but some people are coming over!

I meal prep lunch and dinner for Mon-Thurs (school days) every Sunday. I am starting the keto diet on monday so my meal preps for this coming week are:

Lunches:

Tuna Salad w/ mayo, celery, red onion, cherry tomatoes and dill relish on a spring mix

Grilled Chicken Salad w/ cherry tomatoes, hard boiled egg, cucumber, walnuts, and chunky blue cheese dressing 

Dinners:

Beef Fajitas with bell peppers, onions, and cauliflower rice

Bunless burgers with salad and blue cheese dressing

Reviving this! Here's what's on my menu for the next bit:

beef and scalloped potatoes

Italian crescent casserole

 

Enchilada casserole

easy crockpot pork chops

cheese pasta roll-ups (made this today, yum!)

slow cooker tater tot casserole  

chicken and mushroom pasta

I try to always try a few new recipes to keep me excited about being in the kitchen, and a few tried and true. :)

I don't cook dinner everyday because Joe works retail and is only home for dinner 2-3 nights a week. The nights I don't cook dinner, I either eat leftovers or do something easy like a salad or tuna wrap.

 

 

 

This week we are going to a Rockets game on Wednesday night and we'll eat there but I am planning on making at least two dinners this week.

 

Chicken Fajitas with Refried Black Beans

 

BBQ Chicken Avocado Burritos - These are AMAZING btw. The original recipes is for Quesadillas and I made them that a couple of times before switching to burritos done in the George Forman to make the tortilla crunchy.
