Quick easy meals for singles

Just wondered if anyone had any ideas about quick easy HEALTHY meals or snacks for single people? Bonus if they're low caloric. I'm fat and in a wheelchair lol. My favourite dishes are rice and pasta dishes, but i'm trying to steer away from them.

I love cottage cheese or plain greek yogurt (the flavored kind has a lot of sugar. If you want flavor just have the plain with your own bought fruits). I know a lot of people don't like cottage cheese, but if you do, you can also eat it as a dip with bean chips (healthier than tortilla chips). The same goes for plain yogurt, you can use it as a dip for chips and stuff. 

I am single and I order Blue Apron, which is a meal delivery plan. I order the 3 recipe plan, which is actually 6 meals for one person (1 recipe=2 servings). And it usually lasts me 2 weeks, so I only get new recipes every other week and pay $120 per month ($60/box). 

If that's not what you're into, a simple but healthy dinner meal is a baked chicken breast and veggies (steamed, roasted, sauteed...etc.). Or a salad. You can boost your nutrient intake by choosing certain veggies. Like having a kale and spinach salad instead of lettuce. I think cauliflower is a great vegetable.

If you like pasta and rice dishes, maybe try substituting those for quinoa (pronounced keen-wah). I know it was a trendy food a while ago but it is superior to rice and pasta nutritionally. It's also a very versatile dish. You can add a lot of stuff to it (vegetables, meat, fruit, herbs...) to make it yummy. You can also bake it to make healthy treats. You can also buy Banza pasta, which is pasta made from chickpeas and therefore has more protein and half the carbs as wheat pasta. Also, if you want rice maybe try brown or black rice instead of white rice.

I am a fan of The Keto Diet, which focuses on higher protein intake and less carbohydrates. However, since you're in a wheelchair I would just focus on the less carbohydrates part. Mostly, that just means less sugar. Which can be super hard since sugar is put in EVRYTHING these days. If you are trying to lose weight, I think a big help would be portion control. I think a lot of people eat more during a meal than they should (and by "should" I mean they are eating more calories than their body can process at once and therefore turns a lot of it to fat). So limit yourself to eating one serving per meal.

Quick, Easy, and Healthy don't often go in the same category together. Clean(er) eating takes effort and planning ahead. You can make many healthier choices from what you already eat (Substituting rice or pasta for zuchinni noodles, or quinoa etc). Cut back on the sugar (My worst enemy). Eat unil you're full and nothing more. Drink a lot of water all day, and a glass before every meal to help you feel more full.


Sheet pan dinners are usually easy, but meant to feed a crowd. You can downsize the recipe, or freeze extras for another day!

Wow I love these suggestions so much! I have a support worker who tries to help me cook stuff because it's just not really possible for me in my situation to cook from scratch myself. So i'm definitely going to look this stuff up and give it a go. My biggest downfalls with eating, which has been since I was a teen... is skipping meals, then eating a larger meal that is often carb loaded (and eating to excess) and doing the whole cycle again the next day. I do try to get in some fruit as I actually quite like them, but rarely eat veggies except steam fresh with things like stir fry or when I make pork chops. Much of this is going to have to be willpower to change my habits, but i'm sure I will get there. My whole family is going on a health kick, so I guess I will need to follow suit :P I can't be the only fat one in the family lol.
