We bought a whole, pre-marinated chicken from the store (plus a bunch of other things because it was grocery day), and I threw that into an oven pan with some potatoes and carrots (I seasoned them with salt, pepper, garlic powder, oregano, and olive oil). Cooked that for 90 minutes at 200C, though I originally pre-heated the oven to 175C only. I turned it up once the pan went in. I made a salad to go with it (romaine, lollo rosso, tomato, cucumber, shallots, and my improvised honey-mustard dressing) and served it with feta on the side. There was also some Knorr 3-pepper sauce to drizzle over the meat and veggies. So good. |

Yesterday's lunch was nacho salad: lettuce, tomato, shallots, avocado, salsa, cheddar sauce, BBQ pulled pork, and tortilla chips. |

I made regular guacamole and added 2 heaping tablespoons of Greek yogurt and the juice of 2 limes. Scooped some onto a cheddar rice cake, a sour cream & onion rice cake, and a Finnish rye cracker. |
