The days have been flying by, but that's okay! We're having some fun! :D

For today, I'd like to see those Christmas Cookie recipes you've got stashed away!
Are they a family recipe or something you found online and love?

I just love the flavor and chewy soft yummy goodness! Haha!
I usually buy the pre-mixed cookie batter box/bag since I'm lazy and don't want to add all of the ingredients, but I usually end up putting red and green sprinkles on to look more festive!

My mother in law makes a version of Tollhouse cookies that are just divine. She swears thisis the recipe she uses but mine never turn out like hers so I'm not convinced! Either way they still taste amazing and they are really simple to make.

I come from New Zealand so we don't have what you would call traditional Christmas Cookies as its hot so most people tend not to cook that much. But we would make these biscuits which you won't find elsewhere in the world.


They are called Afghans and this is the receipe that I use:



Ingredients





  • 200 grams butter (at room temperature)

  • 1/2 cup caster sugar

  • 1 1/2 cups all-purpose flour

  • 3 tablespoons unsweetened cocoa powder

  • 1 1/2 cups unsweetened corn flakes (Kellogg's)

  • Icing:

  • 1 cup icing sugar

  • 2 tablespoons unsweetened cocoa powder

  • 3 tablespoons water

  • Optional: 1/4 cup flaked almonds




 

Steps to Make It





  1. Gather the ingredients.






     






  2. Preheat the oven to 350 F/180 C. Line a baking sheet with baking paper. Set aside.



     



  3. Cream the butter and sugar until light and fluffy.



     



  4. Sift together the flour and cocoa powder and mix into butter mixture with a wooden spoon.



     



  5. Fold in cornflakes and don't worry if they crumble.




  6. Roll or press 1 1/2 teaspoons of the dough into balls and flatten them slightly. Place them about 2 inches apart on the baking sheet.




  7. Bake in the oven for 10 to 15 minutes. Remove from oven, and cool on a wire rack.




  8. Prepare the icing by combining the icing sugar, unsweetened cocoa powder, and water in a bowl.




  9. Mix well until the mixture is free of lumps and of a creamy consistency.




  10. Spoon a little icing on each cookie, and decorate with flaked almonds.

We don't really have any Christmas cookies so I found some that I love the look of and I may have to have a shot at making them this year to take with us.

Chocolate Snowman Cookies

Ingredients

250g plain flour , plus extra for dusting

0g cocoa powder

150g butter , softened

130g caster sugar

75g light brown soft sugar

1 egg

½ tsp vanilla extract

For the icing

about 200g icing sugar

about 3 tbsp milk

To decorate

about 5 cranberries

2-3 slices of dried mango

You will need

6cm, 5cm and 3.5cm round cutters

METHOD:

STEP 1

    • Mix the flour, cocoa and a pinch of salt in a bowl. Beat the butter with the sugars in another bowl for about 3 mins until pale and creamy. Stir in the egg and vanilla. Gradually mix the dry ingredients into the wet, and bring together with your hands. Wrap the dough and leave to chill in the fridge for 1 hr.


      STEP 2
    • Heat the oven to 170C/150C fan/ gas 3. Roll out the dough on a lightly floured work surface to a thickness of about 4mm, and press out circles in three sizes. Place them, sorted by size, on baking sheets lined with baking parchment. Bake the smallest cookies for 6-8 mins and the remainder for about 10-12 mins. Remove from the oven and transfer to a wire rack to cool completely.

STEP 3


    • Tip the icing sugar into a small bowl and gradually add the milk, stirring until smooth and thick. Coat the tops of the biscuits with it using a small knife, then stack three of each biscuit, starting with the largest. Cut the cranberries into small pieces and stick to the snowmen as eyes, mouths and buttons. Cut the strips of mango into the shape of mini carrots, and place them on the faces as noses. Leave to dry. Will keep in an airtight container for up to three days.

So as a child, my grandma would make us monster cookies around Christmas. They aren't tradional "christmas" cookies, that's just how I think of them since it's the only time of the year I got to eat them! I won't share the secret family recipe for them, but I found something similar online!

I actually just baked a bunch of different cookies last week to give away to family and friends. I love to bake so I love this time of year because it gives me a big excuse to bake and bake and bake some more. My 3 year old has always liked helping me bake and cook too. I always liked the look of the peanut butter cookies people made with the big hershey kiss stuck in the top of them, but I'm not a chocolate peanut butter fan (mostly the peanut butter). But I found these on facebook this year and thought they looked good. And they were! And they were fun to make! This picture was mine after they were completed. Now I have my own version of the peanut butter blossoms that other people make all the time! My husband's favorite all time cookie is molasses and these ones are gingerbread molasses. Recipe here.

I also want to make my homemade Girl Scout Samoa cookies this month too. I haven't made them since my husband and I were dating. Again, I saw the recipe on facebook and they taste just like the real thing! And they're fun to make! (Just take time) Recipe: page 1, page2, page 3, page 4

I also want to try making needhams. I've never made them before. But my mother in law's best friend makes them every year. And they're so good! Again, it's coconut like the Samoas. I love coconut!

My favorite cookies are a family recipe - we call them Christmas Cinnamon Log Cookies! It's such an easy recipe and very unique, and, though I've seen plenty of variations on Pinterest, I've never found a recipe quite like these.

Ingredients: 2.5c flour, 1c butter, 1/2 c sugar, 1 egg separated into yolk & white, 1 teaspoon vanilla, 1 tablespoon cinnamon 3 tablespoons sugar.

Recipe:

1. Cream butter, sugar, and vanilla.

2. Add flour and egg yolk.

3. Form into 2 rolls 10" long and about 1.5" diameter.

4. Brush rolls with beaten egg white and dip into mixture of cinnamon and sugar.

5. Cut rolls in 1/4" slices.

6. Put on greased cookie sheet and bake at 375* for 10-12 mins (they do not expand much so you can fit lots of them on one cookie sheet). Should make 3-4 dozen.

I really dont make cookies that often but I make instead a Sticky Toffee Pudding hope this counts, it takes awhile but is so worth it :)   pts to grt dane 131300

Ingredients Toffee Sauce  2 ½ cups heavy cream, 1 stick unsalted butter (4 ounces),

½ cup light corn syrup, 1 cup granulated sugar

Cake 6 ounces pitted dates (about 7 dates preferably Medjool),¾ cup water, ¾ cup plus 2 tablespoons all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon baking soda, 1 pinch of salt

4 tablespoons unsalted butter (softened), ¾ cup packed light brown sugar, 1 large egg

½ teaspoon pure vanilla extract

Vanilla ice cream or lightly sweetened whipped cream (for serving)

Directions Step 1

In a medium saucepan, combine 1 1/4 cups of the cream with the butter, corn syrup and sugar; bring to a boil. Cook over moderately low heat, stirring frequently, until a deep amber caramel forms, about 40 minutes. Carefully whisk in the remaining 1 1/4 cups of cream. Strain the sauce through a sieve into a bowl.

Step 2

In a small saucepan, simmer the dates in the water over moderately low heat until the water is nearly absorbed and the dates are soft, about 15 minutes. Transfer the dates and any liquid to a food processor and puree until very smooth.

Step 3

Preheat the oven to 350°. Lightly butter six 1/2-cup ramekins. In a small bowl, whisk the flour with the baking powder, baking soda and salt. In a medium bowl, using an electric mixer, beat the butter with the brown sugar at medium speed until light and fluffy. Beat in the egg and vanilla, then beat in the date puree. At low speed, beat in the dry ingredients. Spoon the batter into the ramekins and smooth the tops. Bake for 20 minutes, or until a toothpick inserted into the centers comes out clean; let cool slightly.

Step 4

Using a small serrated knife, trim the tops of the cakes level with the rims of the ramekins. Unmold the cakes and invert them onto a wire rack. Slice each cake in half horizontally. Wipe out the ramekins and spoon 1 tablespoon of the toffee sauce into each. Return the bottom layers of the cakes to the ramekins, cut side up. Spoon another tablespoon of the toffee sauce into the ramekins and top with the remaining cake layers. Spoon another tablespoon of the toffee sauce over the cakes and spread evenly. Place the ramekins on a baking sheet and bake for 10 minutes, or until the toffee is bubbling around the edges.

Step 5

Let the puddings cool for 5 minutes, then run a thin-bladed knife around the insides of the ramekins; invert each pudding onto a dessert plate. Rewarm the remaining toffee sauce and spoon some around the puddings. Serve with vanilla ice cream or whipped cream.

I'm so basic. I love chocolate chip cookies the most! xD

INGREDIENTS

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups semisweet chocolate chips

DIRECTIONS
1. Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.

2. In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.

3. Beat in egg and vanilla until smooth. Stir in flour mixture just until blended (dough will be stiff). Stir in chocolate chips.

4. Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.

5. Bake 8 to 10 minutes or until light brown (centers will be soft). Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.

Some legit tips for baking great cookies!
1. The best cookie sheets are shiny aluminum with a smooth surface and no sides. They reflect heat, letting cookies bake evenly and brown properly. Rimmed baking sheets are excellent for many things, but not for cookie making.

2. Line flat cookie sheets with parchment for easy cleanup.

3. There is lots of baking science behind what makes a soft, chewy cookie versus a crisp, crunchy cookie. The ratio and type of sugars used, the amount of butter or shortening, and how much flour is stirred in all make a difference. Look into it more depending on what kind you prefer!

4. Use a 1-inch meat baller (or a cookie/ice cream scoop) to make consistently even-shaped cookies.

5. Make jumbo cookies—use a measuring cup or cookie/ice cream scoop to scoop dough. Drop dough 3 inches apart, and bake until edges are set (centers will be soft).

I don't really bake cookies as my son is not a big fan of them, but this one is pretty cool one I've made in the past. Please note it is not my recipe, but one I got off a food blog.

GINGERBREAD CUT OUT COOKIES

yield: 20 COOKIES prep time: 20 MINUTES cook time: 8 MINUTES additional time: 3 HOURS total time: 3 HOURS 28 MINUTES

Make these adorable Reindeer Gingerbread cookies using a gingerbread boy cut out. 

INGREDIENTS

1/2 cup shortening

1/2 cup granulated sugar

1 teaspoon baking powder

1 teaspoon ground ginger

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon salt

1 egg

1/2 cup molasses

1 tablespoon vinegar

2 1/2 cups all-purpose flour

INSTRUCTIONS

In a large mixing bowl beat shortening with a mixer on medium to high speed for 30 seconds. Add the next seven ingredients (through salt). Beat until combined, scraping bowl as needed. Beat in egg, molasses, and vinegar. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Divide dough in half. Important: Cover and chill about 3 hours or until dough is easy to handle.

Preheat oven to 375 degrees F. On a lightly floured surface, roll out one portion and cut out shapes, rerolling scraps as needed. Place cutouts 1 inch apart on ungreased cookie sheet.

Bake for 6 to 8 minutes or until edges are lightly browned. Cool on cookie sheet for 1 minute. Transfer to a wire rack and let cool. If desired, decorate cookies with Powdered Sugar Icing or Royal Icing and candies.

We make peanut butter kiss cookies - which I think people call peanut butter blossom cookies. They are DELICIOUS. The peanut butter is great by itself, but then when you add in the chocolate your taste buds just die lol

2.5 cups flour
1 cup sugar
1 tbsp milk, 
3 tsp baking powder
1/2 cup butter (softened)
1 tsp vanilla
2 eggs.

Mix dry thoroughly.
Mix wet thoroughly.
Mix together - do not overmix (or it gets tough).
Roll out 1/4" thick.
Cut into desired shapes.
Bake @ 350 for 10-14 minutes until bottoms a light golden brown.

Option - add frosting, icing sugar, or sprinkles.

You can also add cocoa to them (less flour if you do!) and roll them to make pinwheel cookies.

We used to make hundreds of these every year!
