Hello all! 

Trying my hand at cooking more in the kitchen... I'll post some ideas, recipes, thoughts, as much as I can. Comments and suggestions welcome. :)

I like to use my crockpot - it'd be easy to make stuff when you have time and then heat it up. If you google "chicken recipes for crock pot" you can find a huge variety (or whatever meat you wanted). One reason I love the crockpot is generally you just dump ingredients in and then come back to it later, so it's easy.

I always find if i'm starving I'll make a pasta dish because you can make it in about 15 mins.. If i'm weak with hunger an omelette because it's about 5 mins

Anyone found a good cooking with tofu recipe? Or a Thai dish that doesn't rely so heavily on peanut sauce or flavoring? I'm not a big peanut person. 


Also need some no-cook summer pasta/salad/something recipes, please. Meatless is a plus but not a requirement.

Cooking chicken today -- I've got skin and fat boiling in water on the stove (for dog treats and chicken broth) ; chicken in oven rubbed with olive oil and garlic, salt, lemon pepper, and cajun seasoning, covered in broth. 375 degrees F cooking uncovered as chicken is fully submerged in liquid.

Hoping the baked chicken will be moist enough for lunch salads; Fingers and toes crossed.

Oooh I'm excited to see what you cook! I need some light, Summer recipes. We always gravitate towards cold meat and salad because it's so stinking hot here, and so easy to whip together.
